-BUNNY'S "BEST YOU EVER HAD" NOODLES

8 oz udon noodles, or other whole wheat noodles
1 bunch kale
2 carrots
5 scallions
2 TBS. toasted sesame oil
2 TBS. Shoyu ( excellent quality soy sauce)
1 TBS. ume (plum) vinegar or brown rice vinegar
1 TBS. mirin (Japanese rice wine)
3 TBS. sesame seeds, toasted lightly in a skillet

Dice kale leaves and slice the stems very thin on the diagonal. Matchstick
carrots or slice very thinly in half moons. Add noodles to boiling water
and cook for 5 minutes. Add kale and carrots and cook for another 3-5
minutes, until noodles are cooked, but not overdone. Drain and transfer to
a bowl.

Combine the toasted sesame oil, shoyu, vinegar and mirin until well mixed.
Pour over noodles. Top with toasted sesame seeds and finely sliced
scallions.
